The study of Phase Changes

This is what I'm learning right now in my Materials Science class. To see a phase change in action - the professor brought to class a styrofoam bucket of liquid nitrogen, as well as cream, sugar, and raspberries. By slowly quenching the cream mixture to liquid nitrogen temperatures (essentially mixing the two together), we were able to make a smooth pliable substance chemically unchanged from the original mixture. Right on the classroom floor. We each took our share and tested it for scientific quality. The outcome was as expected - in a time frame of only 10 minutes, we had fresh raspberry ice cream! In class!
